The Salmon Salami by Highland Farms boasts a unique blend of Atlantic salmon air-dried for 14 days and cured over fragrant beechwood, embodying a perfect fusion of traditional craftsmanship and exceptional flavor, as described by the company. CEO Jonathan Brown expressed, "We've spent a year and a half working on this project and wanted to develop something that has a unique taste." Social Kitchens Professional/SK Foods Brand's winning Premium Shrimp Sliders are crafted with solid chunks of shrimp, free from binders, fillers, scraps, or gluten. Director of Product Development Kenneth Fryer shared, "Our company's mission is to create products that people really enjoy and they can actually resonate with." The winning products underwent rigorous evaluation by a panel of judges, including seafood industry experts, during Seafood Expo North America/Seafood Processing North America in Boston, Massachusetts, U.S.A. The competition highlighted innovation, taste, market potential, and originality, showcasing the finest offerings from exhibitors worldwide. Hosted by Diversified Communications, the expo attracted 1,210 exhibiting companies from 49 countries, underscoring its status as the premier seafood trade event in North America.

    In January 2024, the United States witnessed a decrease in shrimp imports, totaling 59,442 metric tons (MT) or 131 million pounds, compared to 68,734 MT or 151 million pounds imported in January 2023. This trend marks a continuation of the decline observed since 2023 when the country imported 1.7 billion pounds (785,837 MT) of shrimp, representing a reduction of approximately 114 million pounds or 52,000 MT from the total in 2022.
