Chicago-based AQUA Cultured Foods has unveiled a groundbreaking partnership with Ginkgo Bioworks, a leading biotechnology research firm, aimed at advancing the realm of plant-based seafood alternatives. AQUA Cultured Foods' Chief Science Officer, Stefan Baier, emphasized their departure from traditional "alternative" labeling, highlighting the complementarity of their products with genuine seafood. The collaboration with Ginkgo Bioworks promises to accelerate their mission of sustainability by leveraging the latter's expertise in synthetic biology and bioengineering.
According to Mervyn de Souza, Senior Director of Business Development at Ginkgo Bioworks, the partnership couldn't have come at a more critical juncture. With global seafood demand surpassing the ocean's capacity, there is a pressing need for eco-friendly alternatives. This collaboration represents a paradigm shift towards sustainable food choices, addressing concerns surrounding overfishing and environmental degradation while preserving the sensory experience of seafood.
Azuma Foods Launches Innovative "Future Fish" Plant-Based Lineup
Meanwhile, Azuma Foods, based in Japan, has introduced its pioneering "Future Fish" lineup under the Green Surf brand. Featuring tuna, salmon, and squid analogs, these plant-based alternatives are crafted from konjac, a root vegetable, and meticulously formulated with ingredients such as salt, locust bean gum, trehalose, and flour to authentically replicate the taste and texture of traditional seafood.
The company's ambitious vision aims to usher in a new era of seafood consumption devoid of animal-derived ingredients, catering to the growing demand for sustainable food options worldwide.
